Isn’t it worth a little effort to enjoy activities with the ones you love that draw you closer together?

Delightful Waffles

These waffles are delightful and healthy, topped with fresh fruit.

Healthy Breakfast Recipes - Delightful Waffles

Ingredients:

1/4 cup water
1/4 cup nutritional yeast
1 cup sifted light rye flour
1-1/2 cups sifted whole wheat pastry flour
3 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
2 to 2-1/2 cups water
6 egg whites
2 teaspoons cream of tartar

Directions:

Gradually add the 1/4 cup of water to the yeast to make a thick paste. Sift the dry ingredients and spices together. While stirring, gradually add the water and the yeast-water mixture until you get a cake batter consistency. Beat vigorously for several minutes.

Beat the egg whites and cream of tartar until the whites are stiff and will form a peak. Gently fold the whites into the batter.

Do not stir or beat. Use a nonstick waffle iron to bake to your taste.

Recipe yields 12, 4-inch Good-For-You waffles (six servings).

Nutrition information per serving: 178 calories, 0.8g total fat, trace saturated fat, 0mg cholesterol

Recipe makes about 6-8 servings of waffles

I though I’d start posting some great recipes every now and then.
This one is delicious and it takes only a few minutes to prepare.

Healthy Breakfast Recipes - Portuguese French Toast

Ingredients:

Egg substitute equivalent to five eggs
4 cups skim milk
1/4 cup white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 teaspoon orange zest
1 (1 pound) loaf Portuguese sweet bread
2 tablespoons unsalted butter, cubed

Directions:

Preheat the oven to 350 degrees F (175°C).

Whisk together the eggs, milk, sugar, cinnamon, nutmeg, and orange rind in a medium mixing bowl.

Cut the bread into seven or eight slices, and lay them, overlapping, in a large baking dish.
Pour the egg mixture over the bread, covering every slice. The bread should not be entirely submerged though; the higher parts should become toasted and crispy.

Dot the bread with the butter. Bake the French toast in the oven for 35 to 45 minutes until the custard is set. Serve immediately.

Recipe makes 6 servings Portuguese French Toast.
